Recently I picked some zucchini from our garden and I spent the last couple days trying to decide what I was going to make with it. After thinking about it for awhile the idea of Baked Zucchini Donuts popped into my head. Since I loved my zucchini muffin recipe, I figured they would be similar. (I’ll have to share that recipe another day)
Then I had to decided what type of Glaze I wanted the donuts to have. I’ve been obsessed with my I Heart Bee’s Honey so I thought it would be fun to incorporate the honey into the glaze! I used the Florida Summer Blend for this recipe!
I used this 2-pack Non-Stick Donut Pans that I got off Amazon! They also work great for my homemade bagel recipe which you can find on my instagram. Since i’ve been craving my low carb bagels i’ll have to do a blog post with the recipe soon!
This recipe was so simple to make and it turned out AMAZING! I had so much fun creating it and I hope y’all love it as much as I do!

- 10 Tbsp of butter softened
- 1 cup sugar
- 2 Large Eggs
- 1 1/2 Cup Grated Zucchini
- 3 Cups Flour
- 4 1/2 tsp Baking Powder
- 1/2 tsp Salt
- 2 Tbsp Ground Cinnamon
- 1 1/4 Cup Milk I used skim milk
- 1 Cup Powder Sugar
- 3 Tbsp Honey I used IHeartBee's Honey
- 1/2 tsp Ground Cinnamon
- 2 Tbso Milk I used skim milk

- Preheat oven to 350 degrees and grease donut pan. (Set aside)
- In a large mixing bowl, add butter and sugar and mix well. Then Mix eggs and grated zucchini. In separate bowl, whisk together flour, baking powder, salt, cinnamon. Then combine both bowls together and mix well until fully combined. Then slowly add in all milk.
- Scoop batter out of bowl into donut pan with a spoon. Slowly even out batter by going around each donut cup several times with the spoon. (or if you want you can pipe the batter into donut pan)
- Bake for 17-18 minutes. Once cooked take donuts out of the oven. Then use a butter knife to flip donuts out of the pan and onto a cooling rack.
- While donuts cool, in a small bowl mix powdered sugar, honey, cinnamon and milk together. Once the donuts are completely cool, hold them upside down one at a time to dip in the glaze. Add any preferred toppings (I added Sprinkles) Then let dry on a cooling rack and enjoy!
