Honey Cinnamon Glaze Zucchini Donuts

Recently I picked some zucchini from our garden and I spent the last couple days trying to decide what I was going to make with it. After thinking about it for awhile the idea of Baked Zucchini Donuts popped into my head. Since I loved my zucchini muffin recipe, I figured they would be similar. (I’ll have to share that recipe another day)

Then I had to decided what type of Glaze I wanted the donuts to have. I’ve been obsessed with my I Heart Bee’s Honey so I thought it would be fun to incorporate the honey into the glaze! I used the Florida Summer Blend for this recipe!

I used this 2-pack Non-Stick Donut Pans that I got off Amazon! They also work great for my homemade bagel recipe which you can find on my instagram. Since i’ve been craving my low carb bagels i’ll have to do a blog post with the recipe soon!

This recipe was so simple to make and it turned out AMAZING! I had so much fun creating it and I hope y’all love it as much as I do!

Cut the Zucchini in half and core out the seeds.

Then chop the zucchini into small pieces and put in a food processor. I used my Ninja smart screen blender and food processor.

Once grated the zucchini should look like this.

Measuring out the grated zucchini

Getting ready to mix the softened butter and sugar.

After mixing the butter & sugar, I added in the grated zucchini and then the eggs.

This is what it should look like before adding the dry ingredients.

This is what the batter should look like once you add the dry ingredients to the wet ingredients.

I used a spoon to scoop the batter into the donut pans. (You can pipe the batter if you’d like)

Pouring the honey for the Honey Cinnamon Glaze

This is what the Glaze should look like when it’s all mixed.

This is how the donuts should look when you take them out of the oven.

Make sure to lay down a paper towel underneath your drying rack because the glaze can be kind of messy while it drys.

While they dry you can add any type of toppings you would like. I added some fall sprinkles!
